Fried Rice

Ingredients: 2 cups of cooked Minute Rice; 4 cups water; 2/3 cup chopped baby carrots (about 12); 1/2 cup frozen green peas; 2 Tbsp. vegetable oil; 2 eggs; 1/3 cup soy sauce (more or less to taste).

Directions: Fix rice according to directions on the box, then set aside. In a small saucepan, bring four cups of water to a boil. Chop carrots into small chunks. Drop carrots into boiling water for four minutes. Add peas to carrots and let boil for one more minute. Drain peas and carrots. Turn skillet to med-high and add in oil. Stir in peas and carrots. Cook for 30 seconds. Crack eggs and stir into skillet with peas/carrots and scramble. When eggs are done, add rice and soy sauce.
